I would've voted Iori as person who breaks character most - since she seems quite civil on twitter - no angry moments from our dear little tsundere (well, I guess she was trying to sound angry when Hokuto kept calling her Princess, but that came out as just flustered)

No no, that's being Out of Character (OoC). What i mean by 'breaking character' is getting out of 'being' the character and speaking as the 'you' (like The Rock speaking as Dwayne Johnson, if you catch my drift). Chihaya steadfastly refuses to break character, and will even scold other RPer who does so without proper reason. The player takes it too hard sometimes.
In OoC-ness, the idol rather varies. I wouldn't say that the current Iori is very OoC (seen one before the present one), because her public face
is the deredere that we can see in the anime (and carries to the RP scene). Perhaps in time she will be rougher?
Other RPers don't quite have the staying power/posting output of Chihaya, Yayoi, Miki, and Haruka (the former three has the most posts, while Haruka has been around for about as long as Chihaya and has posted semi-regularly) so there's less posts to judge their OoCness from, but they're mostly nice posters and will be nice to you.
Okay yeah I pretty much have no single idea of why absolutely anyone would want to bother with this. The original post says that the idols have twitter accounts. It's not a character's twitter if it's just some inane creepy fangirl pretending to be them.

Well, it's fun, if i might say so myself. I enjoy tweeting nonsense while trying to keep as close as the canon as possible. Of course it's not an appeal for everyone, I wouldn't think an average fan would be having fun this way. That said, i can say myself as a guy steeped in these kinds of tradition (DnD from 3.0 until 4 got out, writes fanfics for fun) so of course i find fun in doing this.
The cat's out of the bag by now, huh? I'll still let you find out who am i yourself, anyway
