The game recommends one to you. Or you can browse the profiles of producers and click on their production link. There should be a link on the production page that's flanked by bows that allows you to request to join the production (pretty sure there's a confirmation page after that too). Once you send the request, the production leader can either accept or reject you.

So, while doing jobs you can get your Idols Dear/Heart degree up, right? Do more expensive jobs yeild better results or is it the same results for all jobs?

Yes. The amount of affection gained is equal to the stamina cost of the job.
