Probably - The real question you should be asking is 'How much are you willing to spend?'
There's a variety of solutions, depending on a) how much time and b) how much computing power you have (or are willing to invest) you have ahead of you.
If you happen to have the d-sub connector for the X360, you can actually split that signal and input that into some cheap capture devices designed for PC only stuff.
If you don't, there's capture cards that work on component and do HD. How much you want to spend depends, but for decent HD, about 200-250 US will net you about any decent 720p recording solution.
Some will transmit via USB2 (The Happuage and the Avermedia are two examples of this), so consequently quality goes down, but on the plus side, it also means you don't need a specialised setup to record, and it's fine if you're gunning for youtube quality (or so) video.
If you want the whole nine yards, you'll want something that can send to the Hard drive at its native pixels (About 140-190MB/s consistent. Your HDs aren't doing that sustained, short of SAS a RAID0 with 3 or 4 drives or some SSDs). Two examples would include the Blackmagic Intensity Pro, and the AJA Kona series.
You CAN tell the latter cards to compress on the fly, but how much success you have with that is dependent on how good the hardware the cards are stuck in. You'd need at least a good quad core CPU of some kind (so that'd mean quad core, i5s and i7s of most kinds) to keep up it reliably.
If you DON'T (and can keep up with the data) you'll need to reencode it a significant bit, since the file sizes are in the vicinity of 13GB + for a 2:15 im@s reel. It's the best way to do it (since the CPU can do what it needs to do without being rushed) but depending on your computing power, you could be there for hours.
With the USB2 solutions (Haven't seen a good USB3 one yet that compresses), generally, the compression is handled well enough on the device.
I could go on for quite a while, but that's the basics. There's quite a bit of fun involved in recording stuff, but I try not to get people to just rush out and buy an item without them understanding what they're in for.

I have an i5 2500k, 8GB of ram, so I don't think it will be too much of an issue.
Hauppauge HD PVRs seem popular, I can get them for around $260 NZD locally. Might just go with that.
